  Upon arrival around 9:00PM we were greeted by a friendly front of house staff. The decor is calming and covered in low light. The dinner menu was as expected simple but exciting. Vertical offers two menus for dinner Monday to Sunday - the Experencia Vertical for 90 Euros and the Vertical for 75 Euros. The menus included eight to ten dish samples that include vegetarian, meat and desert options. The flavors and combinations are superb and unique. Upon bringing each dish to the table the waitress described each dish in great detail in both Spanish and perfect English. The service was excellent. Upon asking for a non alcoholic cocktail the waitress suggested their version of a Virgin Mojito. It was a beautifully balanced drink.

  Vertical, located on the top floor of the Ilunion Aqua 4 hotel (adjacent to the Aqua shopping centre) on Luis García Berlanga 19 is one of the city’s landmark restaurants and features an outstanding tasting menu, traditional seasonal cuisine with a modern twist that combines South American, Asian and Spanish flavors. The restaurant is split across two levels offering a beautiful view of the city and the City of Arts and Sciences.

  We had Santiago as our waiter, who was so good at explaining the intricacies of each dish and making us feel comfortable that I felt the need to ask his name just so I could mention it here. It's a bit pricey, but each dish was so elegantly constructed, creative, and delicious that it seemed quite worth it. Restauraunte Vertical is a must-try.
